Today’s science experiment: deep fried gnocchi

What we have here is a very short cooking show featuring someone trying out the genius idea of making deep frying gnocchi. Gnocchi (singular gnocco) are Italian dumplings, often filled with potato or cheese, and generally quite tasty. Making them fried and crispy seems a nice idea, if you don’t stop to think about it.

Should you be pressed for time, skip ahead to a little past the first minute, when things get more interesting. Why it happens is left as an exercise to the reader. I have a pretty good idea, but I’d be interesting to see what people think in the comments.

(Incidentally, Deep Fried Gnocchi would be a good name for a band.)
